Ingredients:
2-3 ham hocks
8 cups of water
1 onion, chopped
2 carrots, peeled and chopped

1 bay leaf

Instructions:
Rinse the ham hocks under cold water and place them in a large pot with 8 cups of water.
Bring the water to a boil and reduce the heat to low. Simmer for 2 to 3 hours, or until the ham hocks are tender and the meat falls off the bone easily.
Remove the ham hocks from the pot and let them cool slightly. Remove the meat from the bones and chop it into small pieces.
Add the chopped onion, carrots, celery, garlic, and bay leaf to the pot. Simmer for 30 minutes or until the vegetables are tender.
Add the chopped ham hock meat back to the pot and season with salt and pepper, to taste.
